This bright summer salad is exactly the kind of lunch we want waiting in the office fridge on a busy summer weekday. It’s packed with spring mix, roasted yellow beets, strawberries, snap peas, feta, and crispy shallots, then finished with a sweet and tangy honey lemon vinaigrette.
Packed in the PlanetGoods To-Go Salad Bowl Kit, everything stays fresh and separate until you’re ready to eat. The greens stay in the glass bowl, the toppings stay tucked into the stainless steel tray, and the dressing gets its own leakproof container in the center. When lunchtime rolls around, just pour, drizzle, toss, and eat.

Summer Salad Recipe with Honey Lemon Vinaigrette
Ingredients:
For the salad:
- 1½ cups spring mix
- 1 small yellow beet, roasted and thinly sliced (see note 1)
- ½ cup fresh strawberries, hulled and halved
- ½ cup snap peas
- ¼ cup crumbled feta cheese
- 2 tablespoons crispy fried shallots, store-bought or homemade
For the Honey Lemon Vinaigrette:
- 1½ tablespoons olive oil
- Juice of 1 lemon
- ½ teaspoon honey
- Dash of Dijon mustard
- 1 small garlic clove, grated
- Salt and pepper, to taste
Instructions:
1. Make the Honey Lemon Vinaigrette: Whisk together the olive oil, lemon juice, honey, Dijon mustard, and grated garlic in a small bowl or jar. Season with salt and pepper. Give it a taste and adjust as needed. Add a little more lemon for extra brightness or another drizzle of honey if you prefer it slightly sweeter.
2. Prep the Toppings: Hull and halve the strawberries. Remove the strings from the snap peas. Crumble the feta and thinly slice the roasted beet.
3. Pack Your Salad: Add the spring mix to the glass bowl of your To-Go Salad Bowl Kit. Place the stainless steel toppings tray inside the bowl, then fill it with the sliced beets, strawberries, snap peas, feta, and crispy shallots. Pour the honey lemon vinaigrette into the small stainless steel dressing container and place it in the center of the tray. Seal the lid and refrigerate until you’re ready to go.
4. Toss and Enjoy: At lunchtime, remove the toppings tray and pour everything over the spring mix. Drizzle with the honey lemon vinaigrette, toss gently, and enjoy.
Notes:
- No yellow beets? Thinly sliced watermelon radishes make a great substitute.
