Filled with protein, fiber, and healthy fat, these brownies sneak in some extra nutrition without sacrificing the flavor.
INGREDIENTS:
15 oz can of black beans, rinsed and drained
2 eggs
1/2 of a large ripe avocado (or one whole small avocado)
1/4 cup melted coconut oil
1/2 cup unsweetened cocoa powder plus 1 tablespoon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoons vanilla extract
3/4 cup coconut sugar
2 tablespoons chocolate chips for topping (optional)
DIRECTIONS:
1. Preheat oven to 350°.
2. Grease an 8x8 inch baking pan with coconut oil.
3. Process all ingredients (except chocolate chips) in a food processor until smooth.
4. Pour batter into pan and sprinkle with chocolate chips.
5. Bake for 35-40 minutes or until knife inserted in center comes clean and top of the brownies show some cracking. Cool completely before serving.
*Store for up to 3 days in airtight container.
