1 cup butternut squash, cut into cubes
1 Tablespoon pomegranate seeds
1 Tablespoon goat cheese crumbles
1 teaspoon olive oil
Salt, to taste
1. Preheat oven to 400°.
2. Toss squash with olive oil and salt, to taste.
3. Roast in oven 25 minutes. Let cool to room temperature.
4. Pack squash in PlanetBox. Top with pomegranate seeds and goat cheese crumbles.
