  • ¾ cup red lentils***
  • 4 tablespoons tomato paste
  • 2 sprigs fresh basil, leaves removed, plus more for serving
  • Pinch of cinnamon, optional
  • ½ teaspoon sugar, optional

How to Make It

Roast the vegetables

Heat oven to 450°F and lightly oil a sheet pan.

Toss peppers, onion, carrots, and celery with 1 tablespoon olive oil, salt, and pepper. Spread across two-thirds of the pan.

Prepare the tomatoes

Strain the canned tomatoes into a pot, reserving the juice. Toss the tomatoes with the remaining olive oil, salt, and pepper, and spread them across the last third of the sheet pan.

Roast the garlic

Cut the top off the garlic bulb. Place on foil, drizzle with olive oil, salt, and pepper, wrap, and set in the middle of the tray.

Roast everything for 45 to 55 minutes until softened and starting to brown.

Simmer the lentils

In the pot with the reserved tomato juice, add:

  • Vegetable stock
  • Lentils
  • Tomato paste
  • Basil leaves
  • Cinnamon and sugar (if using)

Bring to a boil, then reduce to a simmer. Cook 10 to 15 minutes, until lentils are soft and starting to fall apart.
