APPLE FRIES WITH PIE DIP
The perfect protein packed snack for kids who like dipping and munching.
Ingredients
1 cup vanilla yogurt
1 tablespoon natural nut butter
1/2 teaspoon cinnamon
1 crisp apple
Directions
1. Use the wavy chopper from the Three Piece Prep Set to cut an apple into “fries.”
2. In a bowl, cover apple fries with cold water and a sprinkle of lemon juice.
3. Drain apple fries and pat dry with a towel.
4. Mix yogurt, nut butter, and cinnamon. Pack in the Trailhead Double Sided Container or any lunch box with a Dipper.
APPLE GRAIN SALAD
Packed with sweet apple bites, hearty grains, and cheesy morsels, this salad is full of good-for-you ingredients that even the pickiest eater will enjoy.
Salad Ingredients
Cooked barley, wild rice, or quinoa
Rotisserie chicken, chopped into pieces
Shredded cheddar cheese
Sunflower seeds
Chopped lettuce or greens (optional)
Dressing Ingredients
2 tablespoon balsamic vinegar
2 tablespoons olive oil
1 tablespoon pure maple syrup
Pinch of salt
Directions
1. Combine salad ingredients- as much or as little to your liking- in your lunch box.
2. Add dressing ingredients to a small Glass Storage Container and shake. Pack dressing in a Dipper.
APPLE & HALLOUMI SKEWERS
Crisp, juicy apples perfectly complement salty, golden-browned halloumi, for a delicious fall flavor combo that’s fun to eat.
Ingredients
1/2 honeycrisp apple, cubed
1 slice halloumi
Juice from 1 lemon
Small popsicle sticks or skewers
Directions
1.Heat olive oil in a large skillet over a high flame. Fry the halloumi for approximately 2 minutes on either side.
2. Let the halloumi cool and cut into cubes.
3. Toss the apple cubes in lemon juice.
4. Alternate between cheese and apple cubes onto the skewers.
APPLE RAISIN LOAVES
Mildly sweet, these are a healthy snack or breakfast filled with nutrients kids will love.
*Makes 12 loaves
Ingredients
2 cups flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
½ cup vegetable oil
3/4 cup pure maple syrup
1/3 cup Greek yogurt
1/4 teaspoon salt
1 teaspoon vanilla
2 eggs, room temperature
2 apples (roughly 1 1/2 cups), peeled and diced
⅔ cup raisins
Directions
1. Preheat the oven to 350°.
2. In a medium bowl, mix together the flour, cinnamon, baking soda, and baking powder.
3. In a large bowl, beat together the oil, maple syrup, vanilla, yogurt, and salt. Beat in the eggs one at a time.
4. Mix the dry ingredients into the wet.
5. Gently fold in apples and raisins.
6. Scoop the batter ¾ way into each section of the Baking Trays.
7. Bake for 20-25 minutes until the tops are golden and a toothpick inserted into the middle of a muffin comes out clean.
APPLE OAT SMOOTHIE
Sweet, filling, and refreshing, this makes a great breakfast on-the-go or a quick afternoon pick-me-up.
Ingredients
1 crisp apple, peeled and cored
¼ cup rolled oats
1 tablespoon almond butter
¼ teaspoon cinnamon
½ cup oat, almond, or rice milk
Directions
1. Add ingredients to a blender and process until smooth.
2. Add more milk to thin out to desired consistency.
