Summer Kale & Quinoa Salad with Creamy Lemon Vinaigrette Recipe

To celebrate the launch of PlanetGoods, our new collection of lunch gear designed for grown-ups, we partnered with longtime PlanetBox fan and collaborator Haley Herridge.

We asked Haley to create a salad recipe specifically for the new To-Go Salad Bowl Kit: something fresh, satisfying, and easy to pack for busy weekdays. This kale and quinoa salad checks all the boxes: crunchy, creamy, bright, filling, and sturdy enough to hold up until lunchtime.

The best part? The toppings stay crisp and the dressing stays separate until you’re ready to eat.

Ingredients

For the Salad:

  • 5–6 cups kale, finely chopped
  • 1 cup cooked quinoa, cooled
  • 1½ cups red grapes, halved
  • 1½ cups colorful bell peppers, diced
  • 1 cup crumbled feta cheese
  • ⅓ cup roasted pistachios

For the Creamy Lemon Vinaigrette:

  • ¼ cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp champagne vinegar or white wine vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 2 tbsp Greek yogurt or mayo
  • 1 garlic clove, grated
  • Salt + pepper to taste

Instructions

For the large salad:

  1. In a large bowl, combine kale, quinoa, grapes, bell peppers, feta, and pistachios.
  2. In a small bowl or jar, whisk together olive oil, lemon juice, vinegar, honey, Dijon, yogurt or mayo, garlic, salt, and pepper until smooth and creamy.
  3. Serve the vinaigrette on the side and store separately to keep the salad crisp for leftovers.
  4. Optional: Top with extra feta and pistachios before serving.

For the To-Go Salad Bowl Kit:

  1. Add kale, grapes, and bell peppers to the clear salad bowl.
