Confetti Corn Muffins with Raddish Kids

There’s something extra special about packing a lunch your kid helped make themselves.

That’s why we teamed up with Raddish Kids to create a recipe that gets little chefs into the kitchen and gives parents one more easy addition for the lunch-packing rotation: Confetti Corn Muffins.

Packed with bacon, cheddar, and corn these muffins are colorful, kid-friendly, and perfectly portioned for a PlanetBox lunch box.

Made with Prep to Pack Baking Trays

These Confetti Corn Muffins are even easier to take from oven to lunch box when you bake them in our Prep to Pack Baking Tray.

These two silicone baking trays are designed so that everything you bake fits perfectly into the compartments of your PlanetBox lunch box. Each tray makes six portions, so you can bake a batch on Sunday and pack straight from the tray all week long.

Confetti Corn Muffin Recipe from Raddish Kids

Ingredients

  • 8 strips bacon

  • Small bunch chives

  • 1 cup flour

  • 1¼ cups yellow cornmeal

  • 1 tbsp baking powder

  • ½ cup sugar

  • 1 tsp kosher salt

  • ½ cup butter

  • 2 eggs

  • 1 cup milk

  • 1 cup canned corn

  • 1 cup shredded sharp cheddar cheese

Tools

  • Baking sheet

  • Foil

  • PlanetBox Prep to Pack Baking Trays

  • Cooking spray

  • Cutting board

  • Measuring spoons & cups

  • Liquid measuring cup

  • Large bowl + medium bowl + small microwave safe bowl

  • Utensils: knife, whisk, spatula, large spoon

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with foil. Grease PlanetBox baking trays with cooking spray.

  2. Add bacon to baking sheet in single layer. Bake until very crisp, 16-20 min. Cool 10 min. Leave the oven on.

  3. While the bacon cools, finely mince the chives into small pieces. Measure 3 tablespoons and set aside.

  4. In a medium bowl, stir together the flour, cornmeal, baking powder, sugar, and salt. Set aside.

  5. Place the butter in a small microwave-safe bowl and heat until melted, 30–60 seconds. Set aside.

  6. Crack the eggs into a large bowl. Throw away shells and wash your hands before whisking eggs until smooth.

  7. Add the milk and melted butter to the eggs. Whisk until smooth.

  8. Add the dry ingredients to the wet ingredients. Stir until just combined.

  9. Drain the corn. Add the corn, cheddar cheese, and chives to the batter. Stir gently to combine.

  10. Crumble the cooled bacon into small pieces. Add to the batter and stir gently to combine.

  11. Scoop the batter into the baking trays, evenly filling the cups to the top.

  12. Bake for 13–15 minutes, or until a toothpick inserted into the center comes out clean.

Why We Love Raddish Kids

When the Raddish team reached out about creating a recipe together, we were immediately on board. We already have Raddish Kids fans right here on the PlanetBox team!

"My daughter gets so excited when she sees a new box on our porch from Raddish. She loves baking and collecting the badges and can actually make many of the recipes without a lot of help. I once woke up on a Saturday morning to find cupcakes that she had baked all on her own!" — Casey, PlanetBox Brand Manager
