Mother Earth Salad
Savor nature's goodness in every bite!
You know what's so good about salads? You can use pretty much any produce you have on hand to create a scrumptious vegan meal. Colors, textures, and shapes amplify a simple salad into a superbly satisfying meal.
We mixed greens with carrot and cucumber ribbons, radish slices, matchstick beets, and romanesco and topped it with a herb vinaigrette for a nurturing salad straight from Mother Earth.
HERB VINAIGRETTE:
1/4 yellow onion
1 garlic clove
3 tablespoons apple cider vinegar
2 tablespoons lemon or lime juice
Large handful of fresh parsley & basil
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1. Combine ingredients in blender until smooth. Store in a jar in the refrigerator for up to a week.
