What is Fattoush Salad?
Fattoush is a bright, crunchy Middle Eastern salad made with chopped veggies, herbs, toasted pita, and a tangy vinaigrette. It’s fresh, flavorful and full of texture, but not always the easiest to pack for lunch.
That’s why we love this deconstructed version from Green Spoon! We partnered with Fanny Singer and Greta Caruso to create a lunch-friendly take on this classic in our new Voyager Leakproof Lunch Box.

A note from Fanny & Greta:
Both of our families love a fattoush salad. With chopped vegetables, crunchy toasted pita chips and a zingy vinaigrette, what’s not to like? Well, one thing: the potential for that same zingy vinaigrette to render the pita too soggy to eat for packed lunch, and leak absolutely everywhere.
Enter the Voyager Leakproof Lunch Box: Pack the pita chips in a separate, sealed section and keep the dressed veggies in another. When it's time to eat, your kid cans scoop the juicy vegetables with the pita and devour their lunch with a satisfyingly audible crunch.
INGREDIENTS:
- A handful of pita chips
- ¼ cup of bell pepper, chopped
- ¼ cup of cucumber, chopped
- ¼ cup of cherry tomatoes, chopped
- ¼ scallion, minced
- A squeeze of fresh lemon juice
- A splash of olive oil
- A tiny pinch of sumac (for extra lemony zing!)
- A pinch of flaky salt
- ~ 5 leaves of fresh mint or parsley, finely chopped
INSTRUCTIONS:
- Combine the vegetables, lemon juice, olive oil and seasonings in a small bowl and toss well.
- Taste and adjust seasonings to taste! Serve alongside pita chips.
