1. Sushi Tacos
Make a batch of sushi rice and set it on the table with a big spoon. On a platter, lay out a variety of fillings—whatever your crew likes—and a stack of snack-sized nori sheets (they’re the perfect size for these mini “tacos”).
Everyone builds their own by scooping some rice onto a piece of nori, adding toppings, folding it like a taco, and digging in. If someone doesn't love seaweed they can use the rice to make a rice bowl and add their favorite toppings.
Filling ideas: avocado, tofu, smoked salmon, cucumber, mango, roasted veggies, egg (scrambled or hard-boiled), carrots, bell pepper—anything goes! Don’t forget the sauces: soy, wasabi mayo, sriracha...
Tip: Slice ingredients into thin matchsticks or strips so they layer easily in the taco.


2. DIY Soup Bowls
Heat up a pot of broth (chicken, beef, miso—whatever you’ve got). While it warms, chop and sauté some veggies, prep a few protein options like tofu, leftover chicken, or beans and pull out some leftover pre-cooked pasta or rice. 
Ladle plain broth into bowls and let everyone build their own soup at the table from the mix-ins you’ve prepped. It’s cozy, customizable, and surprisingly fun.
Topping ideas: parsley, croutons, shredded cheese, green onions, even a drizzle of olive oil.
Why it works: Kids love being in control of their bowl—and you’ll likely see more veggies eaten when they’re the ones choosing them.


3. Snack Plate Dinner (a.k.a. “Everything Dinner”)
Sometimes it’s not a meal—it’s a vibe. Lay out a bunch of snacky favorites and let everyone fill their own plate buffet-style. Great for picky eaters, busy nights, and last-minute guest dinners.
Options: sliced cheese, crackers, deli meat, cut-up fruit, hummus, sliced veggies, hard-boiled eggs, pickles, nuts, or pretzels.
